Is there a way to turn off phone service and data service, and just use the phone for music or something else?

Airplane mode. makes iPhone into a iPod Touch. You can even turn just wi-fi back on in Airplane mode.

NO it turns off cell too. Since you can not call on a plane it turns it off= AIRPLANE MODE
