If I delete a podcast from my iPhone using the left-slide-finger move, how do I prevent iTunes from reloading it onto the phone the next time I sync? Shouldnt the phone tell iTunes to delete the podcast?

You have to delete it from iTunes as well. If not, it will do exactly what it is doing and re-sync it every time.
