Restore or sync iPhone when back from repair 3G

Hello,
I have just been to the O2 shop, who have sent my iPhone for repair. It should take between 7 and 10 days (they say). I have synced my iPhone with iTunes before going to the shop and I understand that when the phone comes back (or it could be a new one), everything will be wiped out. My question therefore is do I need to do a normal sync with iTunes when I get my iPhone back or a restore? What is the difference?
Also, I am trying to understand what I will get back with each operation, especially for things that I am unsure of like:
photos on camera rolltext message historyemail account settingsVPN settingsanything that is likely to be definitely lost?
I have searched the Apple web site and Google but havent found a definite answer.

When you sync, if its a new/wiped device, youll be automatically prompted that youve previously synced an iPhone to that computer, and to set up the new phone using the backup of the previous phone.
Youll get everything on the list back (all of those are backed up). Everything is either backed up by iTunes, or stored in your iTunes Library. You will lose almost nothing. The only exception is if you do get a new phone, your Wi-Fi network passwords wont be restored (a security precaution when restoring to a different device).

When your phone comes back, connect it to itunes & you should be given the option of setting it up as a new device or restoring it from your most recent backup. Select restore from backup, then sync your itunes content & your phone should look just like it did before you sent it off. All youll have to add are passwords for wifi & email, as they are not restored for security reasons. This article details whats included in the backup youll restore from:
