How can I go back to older iBooks iPhone

The new iBooks is too slow in flipping pages.
Also, I would like to request or start a petition since one person requesting is not going to do any good:
Will Apple please make the iBooks display the dictionary meaning right away when you press on a word instead of having to tap define, a la the Kindle application, and make it change brightness by moving the hand up and down like the Stanza, and make the font, font color, and background color more customizable?
