Im half way there now. Today, I transferred de-authorized another computer, de-authorized this one, re-authorized this one and then transferred all my purchases to itunes on the Mac. Now I can see the apps in itunes and rearrange them on the screens via itunes. Everything is still working on the phone.
What I still cant do, however, is to delete any songs that have been ripped to the phone. I can copy them onto the phone, but then theyre writ in stone. I can highlight them on the itunes screen, but the delete option on the menu is grey-ed out. What now?

Are you syncing or manually managing your content?
If syncing, then deselect the music and sync.
If you are manually managing, then make sure that manually manage is checked.

Im manually managing. When I click on that and then click apply I get a pop-up that says that all the phone is synced on another computer (the dead, burned up one) and that music on the phone will be erased and replaced with whats on the computer (which has no music). I tried to copy the music from the phone to the computer, but the copy choice was grey-ed out so I can do that. Basically Im blocked with blind alleys. I can copy from the computer to the phone, but I can not delete anything on the phone.
