Cant copy or move email addresses when composing an email iPhone

If I am composing an email and the email address is already encased in the blue bubble is there any way to copy / cut / paste the text string of the email address contained within the blue bubble?
I can highlight the blue bubble email address by tapping it.... I can unhighlight it by tapping it again. Or I can backspace and delete the email address bubble. Aside from that Ive tried everything and cant figure out how to copy that email address in the bubble.
Why this would be useful:
I want to easily copy/paste/move particular email recipients from the to: field to the CC: field
Or, I want to copy the email address encased in that blue bubble, and paste into my Contacts, or into a SMS text message.
Seems like a major oversight.
