We downloaded an application for entertainment, some time ago using an email address we no longer use, when the application states there is an update, it prompts for the users password associated with the email account we no longer use. How can we change this email account to a valid email account so that upload can occur? Thank you for your help

Apps are DRM protected and tied to the account used to originally purchase them. They cannot be transferred to any other account. You will have to use the account used to originally purchase the app to update it or re-download it for free. You could contact iTunes support and ask that they add the app in question to your download queue, of course explaining the situation:
