Are you running iOS4.2.1?
Most of the issues with the iPhone 3G being slow are related to the hardware in the device. I think that iOS 4.x in general have a bit much going on for the iPhone 3G, but with that said my wifes 3G is usable and doesnt freeze or crash.
You could search google on how to downgrade to 3.1.3, if you are that dis-satisfied with iOS4.x
